Portion control saves money and earns diner respect

It’s no secret that restaurant portion sizes are out of control. A recent study conducted by the Mayer USDA Human Nutrition Research Center at Tufts University found that a whopping 92 percent of chain and non-chain restaurants served portions that were too large. Portion ControlBut over-sized portions neither make smart financial sense nor entice the customer. To be financially-savvy, you should estimate your food costs will account for 30 to 35 percent of your overall expenditures. With massive portions, it is increasingly difficult to stay within this ratio while also creating price points that your diners are actually willing to pay. 

At the same time, nation-wide campaigns have made diners leery to choose restaurants with massive portions. For example, a New York City subway campaign put up posters with the tagline “Cut Your Portions.
